Rhubarb Bars

Rhubarb Bars
  • 1 1/2 c Oatmeal
  • 1 1/2 c Flour
  • 1 c Brown Sugar
  • 1 c Butter Flavor Crisco
  • 1/2 t Baking Soda
  • 1/2 t Salt
  • 1/2 c Nuts of choice
  • 2 T Cornstarch
  • 1/4 c Water
  • 3 c Rhubarb - chopped
  • 1/2 C Crushed Pineapple - drained
  • 1 1/2 c Sugar
  1. Combine oatmeal, flour, brown sugar, Crisco, baking soda, salt and nuts until well blended.  (Kitchen Aid or Hand Mixer work well)
  2. Press 2/3 mix in greased 9 x 13 pan
  3. Combine in medium size pan: Cornstarch, Water, Rhubarb, Pineapple, Sugar
  4. Mix and Cook over medium heat, stirring frequently, until thick
  5. Spread over first layer in 9 x 13 pan
  6. Sprinkle remaining 1/3 mixture on top
  7. Bake at 350° for 30 to 35 minutes

This recipe can be enjoyed warm with ice cream or chilled with whipped topping.  .
